Cebu is the second city of the Philippines and the historical centre of Spanish colonisation — Ferdinand Magellan arrived here in 1521, planted a cross (still present in a small chapel on Magallanes Street), and was killed by Datu Lapu-Lapu on Mactan Island 49 days later in what is celebrated as the first anti-colonial resistance in Asian history. The Basilica Minore del Santo Niño (1565) holds the oldest Christian icon in the Philippines: a figure of the Christ child given by Magellan to Queen Juana of Cebu, the same figure that survived the burning of the town by Rajah Tupas and was found unburned in the ashes. The sinulog festival, held the third Sunday of January, brings four million people to the streets in the largest non-religious street party in Asia.
Cebu's position as the most dived province in the Visayas is built on three specific encounters: whale sharks at Oslob (controversial but the only reliable daily sighting in the Philippines), thresher sharks at Malapascua Island (the only place on earth where thresher sharks surface at cleaning stations reliably — 6 a.m. dive, 25 metres, Monad Shoal), and sardine school dives at Moalboal where 10 million sardines form a ball 500 metres long and 30 metres deep that undulates and flashes in the sunlight. All three are within 4 hours of Cebu City. The west Cebu coast (Moalboal, Alcoy, Samboan) also has excellent sea turtle encounters directly off the beach.
Cebu's food culture is built on lechon — spit-roasted whole pig with skin so crisp it shatters at a tap, suckling fat rendered from a 5-hour rotation over tamarind-wood charcoal. Anthony Bourdain called Cebu lechon the best pig he had ever eaten, specifically from Rico's Lechon and Zubuchon. The best way to eat it is at a birthday party or a fiesta you've been invited to — the whole pig arrives at the table and is carved tableside. The second-best way is at Rico's or CNT Lechon on M. C. Briones Street at 10 a.m. opening, before the best cuts (belly, cheek, rear quarter) sell out. Order with puso (rice cooked in woven coconut leaves into a diamond shape, eaten by unwrapping) rather than plain rice.

The only reliable shallow thresher shark sighting in the world is at Monad Shoal, Malapascua. The dive is at 5:30 a.m., descending to 24–28 metres where a submerged atoll acts as a cleaning station. Thresher Shark Divers on Malapascua Island operates the dive with knowledgeable guides. Book in advance during peak season (December to May). You need an Open Water certification minimum; Advanced is recommended for the depth. The dive window for shark presence is 30–60 minutes after the sharks arrive — they descend back to deep water by 7 a.m.
CNT Lechon (Manalili Street / M.C. Briones Street) and Rico's Lechon (multiple locations) are the two most celebrated. Both use free-range native pigs spit-roasted over tamarind-wood charcoal for 5 hours. The skin should shatter audibly. Order belly (liempo) for the richest fat cap; the cheek and rear haunch are also prized. Arrive at opening (10 a.m.) for the best cuts — they are sold out by 1 p.m. on weekends. Zubuchon (also in Cebu) uses a slightly different seasoning mix. All three are significantly better than Manila lechon.
Approximately 4 hours by bus from North Terminal to Maya Port, plus 30 minutes by bangka to Malapascua. Buses leave Cebu City North Terminal from 5 a.m. To make the 5:30 a.m. thresher shark dive, you must overnight on Malapascua. Air-conditioned buses (Ceres Liner) depart regularly. Private van hire is faster (3 hours) and available through Cebu tour operators. The island has no ATMs — bring all the cash you need.
Sinulog is held on the third Sunday of January in honour of the Señor Santo Niño (the Christ child). It is the largest street festival in the Philippines and one of the largest in Asia — approximately 4 million participants in the 2023 edition. The festival street dance (sinulog dance) traces the movements of a river current (sulog means current in Cebuano), representing the sway of the Santo Niño figure. The Grand Parade runs from the Capitol through Osmeña Boulevard to the Basilica. Hotels book out 6 months ahead during Sinulog week.
